While we’ve subbed our signature high rye grains for 100% malted barley, our American Single Malt still has that signature, subtle Bulleit spice with aromas of sweet vanilla and toasted oak.
It’s light and fruity on the palate with hints of red fruit and pear, which follow into a smooth finish of oaky caramel and subtle cocoa notes.
Westward American Single Malt

Located in Portland, Oregon, the state's cool wet winters has perhaps had a good deal of influence on Westward’s American Single Malt Whiskey. This easy-sipping whiskey is surprisingly delicate, presenting its flavors in a soft and friendly way. Its fascinating mix of orange/lemon against chocolate/herbal creates an intriguing interplay. Despite finishing with a splash of spice, this whiskey is quite elegant in its delivery, lending itself to coming across as more of a character on Downton Abbey versus John Wick. As strange as that comparison might be, it's an ample way of describing what Westward American Single Malt Whiskey has to offer. Mild mannered, stately, and of course, debonair, Westward may not feature high shock value, but time with it will make up for it.
Andalusia Stryker Texas smoked single malt
Distillery: Andalusia Whiskey Co.

ABV: 50%
This whiskey starts with a grain bill of 100% barley. That barley is malted (meaning that it is allowed to germinate) which starts the chemical process changing the starch in the grains into sugar. Once the germination begins, the grains are heated to stop the process from continuing. For the Stryker version of this whiskey, those grains are heated and smoked using oak, mesquite, and apple wood — traditional types of BBQ wood from Texas.
Once the barley has been malted and heated, it is then cooked and fermented to turn those sugars into a mildly alcoholic beer. That “distiller’s beer” is then distilled three times in the Irish tradition (scotch whisky only goes through the still twice, typically) before being placed in a charred American oak barrel for a minimum of two years.
This whiskey is a [Certified Texas Whiskey](https://www.thirtyonewhiskey.com/what-makes-a-texas- whiskey/), meaning that their spirit is a “grain to glass” production that is verifiably made here in the state of Texas.

Cataleja Texas Single Malt is one of the most complex and unique whiskies in our portfolio.
The Single Malt made with 100% Golden Promise Malted Barley was first aged in refill casks, then in a variety of decommissioned Sherry Solera puncheons: Moscatel, Amontillado Dulce, Oloroso, & Palo Cortado.

Yellowstone forgoes the extremes of American single malt, instead finding a place in average/ enjoyable/approachable territory. It offers a good flavor profile, but doesn’t scream single malt and doesn’t try to be anything more than it is. It plays well to its proof, and to some degree hides any prominent maltiness that may otherwise have been present. It’s a product that could draw people in first simply by the gravity of the Yellowstone brand and its well-done label. Because of its approachability, the unsuspecting consumer who buys it (who may not be paying close attention to American single malts yet), may develop an interest in the category as a result.
Stranahan's single malt cask strength

Stranahan's diamond peak extra anejo tequila cask

This year’s Diamond Peak is denoted as Batch #2 of the Extra Añejo Tequila Cask, “a result of a marriage between Stranahan’s Colorado Whiskey, American Single Malt Whiskey leader and innovator, and Reserva de la Familia, the world’s first and finest extra añejo tequila made from the Jose Cuervo family’s special reserves.” This expression will not necessarily be repeated again, mind you.
That said, Batch 2’s formula seems largely the same as it did in 2022: 5 to 8 year old Stranahan’s Colorado Whiskey that then spends just over 2 years in Cuervo Reserva de Familia Extra Añejo tequila casks (which surely held bourbon in them before that).

This single malt is an experimental single malt launch that’s constructed round the usage of uncommon strains of yeast. Two new strains — one pink wine yeast and one rosé wine yeast — are included alongside the home malt whisky yeast to create a brand new taste profile. The completed whiskey is aged for 56 to 71 months in first, second, and third-fill Kentucky bourbon barrels (47%) and ex-Balcones whisky barrels (53%).

Many new to American-made malt whiskeys tend to initially struggle with their overt malty taste. This malt forwardness is to be expected as the majority are 100% malted barley, but the deeper issue is many don’t offer much flavor variation beyond this. At only 3 years old, Old Pepper Small Batch Single Malt has managed to skirt this problem. While still malt-forward, it doesn’t burden itself with maltiness and offers an array of fruit flavors in conjunction. It’s hard to describe the sip as gentle or potent and instead finds an approachable middle ground. Oak also plays its part where it is often absent with many malts, and helps ground the whiskey. Old Pepper is certainly on their way to a great tasting single malt as a lot of the heavy lifting has already been done to bring a wealth of flavors to its sip. All it needs now is a little bit more refining to round off some of its hard edges and Old Pepper looks to certainly have a noteworthy single malt on their hands.
